Description

Sap Sago Cheese, also known as Swiss Schabziger®, is a hard cheese that comes packaged in a 3.17-ounce cone. 

This almost fat-free cheese is for the more adventuresome, and you'll find that a little goes a long way. It can be kept at room temperature (although we keep it under refrigeration).  It is imported from Switzerland.

History and Production of Sap Sago Cheese

Sap Sago has been made for more than 1000 years in the Canton of Glarus in Switzerland.  Its production, using fresh, skimmed Alpine cows' milk, has remained unchanged for centuries.

The milk is heated and soured naturally. Then the raw cheese is salted and flavored with the Alpine herb blue fenugreek, a special variety of clover thay makes the cheese so healthy and gives it its characteristic aroma and attractive green herb color. The natural product is matured for over 5 months, during which time it develops its typical tangy flavor.

On April 24, 1463, the citizens of Germany approved by plebiscite a law on the production, storage, and labeling of the world's first branded product. Today Sap Sago is made and sold by employing the most modern techniques, yet keeping with traditional values.

Have Fun with Sap Sago Cheese

Sap Sago's uses are endless -- grate it over boiled or baked potatoes, noodles, pasta, pizza, soups and salads and even over apple and cherry pies. The Swiss often mix Sap Sago in equal parts with butter for a very tasty spread on fresh breads.

    So glad that I found Sap Sago cheese at Homestead Market. Our local German grocery store doesn't carry it anymore. I grate it, mix with butter and chive - simply delicious. We had this already when I was a child 50 years ago in Germany. Thanks for sending this so fast (3 days!!!)!

    My mother introduced me to this cheese many, many years ago. Over the years I would occasionally find it ... but not lately. I was thrilled to find that you can supply this Sap Sago Cheese. (When I purchased it in the past it was covered in aluminum foil and labeled as "Green Cheese, Switzerland". It seems to me that the flavor was just a little sharper but very similar. Again, I'm so thrilled to have found a source that I can use to keep some in my stock at all times! So glad I found you!

    My father was born in Lebau, Latvia in 1898. Sap Sago cheese was a staple in our house and could be purchased in the grocery store. Don't wait for the holidays. Layer: buttered pumpernickle bread, grated sap sago, a thin slice of bermuda onion, a thin slice of tomato and top with a lettuce leaf. Cut the bread in quarters and you have a canapé. Pick up your cocktail and enjoy

    I am SO pleased with this cheese! I tried everywhere to find it, without any luck. Discovering it through HOMESTEAD MARKET was very lucky, as they appear to be the only importer in the US and their shipping was very quick! It brings back such memories just with its fragrance, and the flavor is indescribabley delicious ! Thank you, thank you, thank you.

    Over the last 30 years it has gotten harder and harder to buy this cheese locally. The German Store I've gotten it from just topped carrying it. Was starting to panic it is in our family favorite meal Pot Roast and Spaghetti. My husband's German grandmother recipe. Thanks for having it!

    Sap Sago cheese - also known as "Green Cheese"

    I love this stuff. We grew up with my grandmother giving it to us on homemade bread in the 1950's and 1960's. I make my own bread with a bread machine, toast it and cover it with ground Sap Sago. It can also be sprinkled on soup or salads. It has a unique taste and smell. Some people are put off by the odor but I notice many of these same people eat blue cheese, Gorgonzola and Parmesan. None of these are devoid of a strong odor! There is a legend that the moon is made of Green Cheese. This is of course absolutely true!
