Description

Sap Sago Cheese, also known as Swiss Schabziger®, is a hard cheese that comes packaged in a 3.17-ounce cone. 

This almost fat-free cheese is for the more adventuresome, and you'll find that a little goes a long way. It can be kept at room temperature (although we keep it under refrigeration).  It is imported from Switzerland.

History and Production of Sap Sago Cheese

Sap Sago has been made for more than 1000 years in the Canton of Glarus in Switzerland.  Its production, using fresh, skimmed Alpine cows' milk, has remained unchanged for centuries.

The milk is heated and soured naturally. Then the raw cheese is salted and flavored with the Alpine herb blue fenugreek, a special variety of clover thay makes the cheese so healthy and gives it its characteristic aroma and attractive green herb color. The natural product is matured for over 5 months, during which time it develops its typical tangy flavor.

On April 24, 1463, the citizens of Germany approved by plebiscite a law on the production, storage, and labeling of the world's first branded product. Today Sap Sago is made and sold by employing the most modern techniques, yet keeping with traditional values.

Have Fun with Sap Sago Cheese

Sap Sago's uses are endless -- grate it over boiled or baked potatoes, noodles, pasta, pizza, soups and salads and even over apple and cherry pies. The Swiss often mix Sap Sago in equal parts with butter for a very tasty spread on fresh breads.

    This is nearly impossible to find even for living in a large metro area. There is no substitute. I must have it when the craving hits. I like it in a cream pasta sauce, on rye toast, white beans. The printed material that came with my cone of cheese recommended it grated on cherry or apple pie. Sounds interesting. Homestead market shipped it out fast and the price was very good. Sure beats driving all over to the specialty food stores looking for it.

    I couldn't remember the name of this hard cheese. As a child, it was a staple growing up in a Dutch household. So glad to have finally found it at www.homesteadmarket.com Extremely happy with the personalized service when I enquired about this product. A little pricey due to shipping cost but after having used it many times, I can see that this small cone of hard flavourful cheese is going to go a long long way. Even considering the total cost, I am very happy to be able to enjoy this childhood delicacy. As soon as it arrived in our mailbox, I grated some on fresh buttered toast and over a hot bowl of my wife's delicious home made cauliflower soup. I used a stainless steel Microplane rasp which I had purchased for my wife from a woodworking supplier in Kitchener, Ontario. It takes very little to flavour a hot buttered toasted english muffin or toasted rye bread. Thank you Gale for the prompt response to my order request.

    Thank you Homestead Market for stocking this Impossible to find Sap Sago cheese. It has been used in our family for over 100 years as it was a favorite of my Dutch father. Your service is fantastic as I ordered it on Sunday night and received the cheese on Friday just in time to give 1 cylinder to my son to carry on the love of this great cheese for another 100 years, Our favorite use is simply on buttered bread eaten with spaghetti!

    Really pleased I was able to get this cheese through your company as it has been getting more and more difficult to find. Even more pleased it was delivered so quickly. I use this cheese in a "old German family" recipe and every time I serve it, there are guests who say how delicious it is and want the recipe. Thank You!

    A taste you really should acquire!

    There's a reason this cheese has been around for centuries...it's awesome! The other positive comments here mirror my feelings about it. I would add that the shipping costs at Homestead Market are a great deal. Also, the traditional way to eat it is with butter but for a basically fat-free but delicious treat (words you don't normally hear together) put small chunks of Sap Sago in the blender and grate until is's a very fine texture, almost a powder. Then mix it with fat-free cream cheese to make a great spread for crackers of whatever type you favor. It does have a very pungent aroma...we used to call it fertilizer when I was growing up (had a Dutch father).

    my mother(German) used Sap Sago in many of the meals she prepared for us when we were growing up, yum, and I still won't make spaghetti if I am out of "my stinky cheese" , love it on my angel hair pasta, and now my wife has acquired a taste for it too, on soups, salads, lasagna, red skin potatoes, etc., so now I have too order Sap Sago more frequently than ever,,,

    Grew up on this as a kid with a Dutch father. Have not found this cheese locally in years. As far as I can find out there are only 5 places to buy Sap Sago in all of North America and Homestead Market is the only one with an online shop. Way to go Homestead Market. Items were shipped quickly and as described. You have put a smile on my face and brought me back to my youth. Will definitely be ordering again!

    After a couple of years not finding this awesome cheese, I wrote to the makers to find some. They directed me to homestead market, and I had my 'fix' in next to no time. First thing I did was grate some on my morning hash browns. Ecstasy. This is one awesome cheese, that I like to describe as 'fighting you on the way down'. It may not be to everyone's liking, but it's so strong it can raise little blisters on your tongue if you hold it there too long if you use too much. Which I do, since it tastes so great.

    I have been looking for this cheese for about 5 years and could not find it. My Grandson typed in the kind of cheese and there was your address. I have almost eaten one whole cake so far. I love it. You can be sure I will order more. Thank you for being online.
