Description
Sap Sago Cheese, also known as Swiss Schabziger®, is a hard cheese that comes packaged in a 3.17-ounce cone.
This almost fat-free cheese is for the more adventuresome, and you'll find that a little goes a long way. It can be kept at room temperature (although we keep it under refrigeration). It is imported from Switzerland.
History and Production of Sap Sago Cheese
Sap Sago has been made for more than 1000 years in the Canton of Glarus in Switzerland. Its production, using fresh, skimmed Alpine cows' milk, has remained unchanged for centuries.
The milk is heated and soured naturally. Then the raw cheese is salted and flavored with the Alpine herb blue fenugreek, a special variety of clover thay makes the cheese so healthy and gives it its characteristic aroma and attractive green herb color. The natural product is matured for over 5 months, during which time it develops its typical tangy flavor.
On April 24, 1463, the citizens of Germany approved by plebiscite a law on the production, storage, and labeling of the world's first branded product. Today Sap Sago is made and sold by employing the most modern techniques, yet keeping with traditional values.

Sap Sago's uses are endless -- grate it over boiled or baked potatoes, noodles, pasta, pizza, soups and salads and even over apple and cherry pies. The Swiss often mix Sap Sago in equal parts with butter for a very tasty spread on fresh breads.

I could not remember the "name" of the cheese my mother enjoyed grated over buttered bread.The taste and fairly pungent aroma of the cheese was embedded in my memory but for years the cheese evaded me. FINALLY when i scrolled through Homestead Market i saw an item that looked promising so i took a chance. Low and behold i had final found it !! Im so happy i could cry. It is everything i remember when i was young, and it's still a superb, unique taste sensation. Will need to order more soon.

Wonderful a childhood memory
Sago is so hard to come by. It's such a special cheese that it's unknown by the big box supermarkets and the special cheese markets here. Homestead was one of the few retailers I found who carry it, they were wonderful in ease of order and very quick ship. I will use them again

At Last!
I've looked for this for a long time. I'm on a diet that restricts saturated fat. This fat-free cheese is delicious as a substitute for Parmesan cheese. It lasts forever too.

Delighted to Find This!
It's been thirty-something years since I had this cheese. My mother used it in low-fat recipes. I recently started cutting down on certain fats & decided to look for Sap-Sago. It wasn't anywhere to be found in my area & I was delighted to find it here at Homestead Market. The taste is sharp & zesty and wonderful on pasta. It definitely helps to have a fine, sharp grater. I'm so happy to have found this cheese again!

Sap Sago cheese
For years I always had a small, hard cone of this cheese on hand. When I last ran out of Sap Sago I was surprised to find that it was unavailable. This is more than ten years ago. I have been on the hunt for it at cheese shops in a number of cities ever since, and I have always been frustrated in my efforts. That is, until recently, when I finally decided to take my search online and discovered Homestead Market. I am now the proud owner of two cones of delicious, pungent Sap Sago cheese, which arrived within days of ordering. A fine grating of this cheese on noodles tossed in butter is one of life's reliable, and simple, pleasures.

Childhood memories
I have enjoyed this cheese since I was a little girl and unfortunately it has become hard to find. My favorite prep is so grate it into softened cream cheese with a little milk - I use 1/3-1/2 of the hard cheese. The remainder keeps very well in the freezer and even grates easier that way.
