Description

Sap Sago Cheese, also known as Swiss Schabziger®, is a hard cheese that comes packaged in a 3.17-ounce cone. 

This almost fat-free cheese is for the more adventuresome, and you'll find that a little goes a long way. It can be kept at room temperature (although we keep it under refrigeration).  It is imported from Switzerland.

History and Production of Sap Sago Cheese

Sap Sago has been made for more than 1000 years in the Canton of Glarus in Switzerland.  Its production, using fresh, skimmed Alpine cows' milk, has remained unchanged for centuries.

The milk is heated and soured naturally. Then the raw cheese is salted and flavored with the Alpine herb blue fenugreek, a special variety of clover thay makes the cheese so healthy and gives it its characteristic aroma and attractive green herb color. The natural product is matured for over 5 months, during which time it develops its typical tangy flavor.

On April 24, 1463, the citizens of Germany approved by plebiscite a law on the production, storage, and labeling of the world's first branded product. Today Sap Sago is made and sold by employing the most modern techniques, yet keeping with traditional values.

Sap Sago's uses are endless -- grate it over boiled or baked potatoes, noodles, pasta, pizza, soups and salads and even over apple and cherry pies. The Swiss often mix Sap Sago in equal parts with butter for a very tasty spread on fresh breads.

    Finally after a LOT of searching I found Sap Sago again. I was raised on this growing up and the grocery that carried it quit. I hunted for a few years and then came across it from you at a reasonable price. My withdrawal days are over at last. I invited my Son over and gave him a sandwich (grated cheese and butter on bread) and it took him back to when he was little. Thank you for selling this cheese, it is not available anywhere within 100 miles of me here!

    Most of the flavors I remember from my childhood have changed so much I no longer even recognize them. You're always told that it's your taste that has changed, not the flavor. After finding this old favorite, that I hadn't tasted for 55 years, on your website I can now tell them they are SO wrong!

    My mother in law use this cheese with butter to make a spread. The family loved it, but I haven't been able to find this cheese locally for some time. So glad to find it and have this treat again.

    Of Swiss heritage, my dad introduced me to Sap Sago at a young age and it's always been one of my favorites, We have always grated it and combined it with butter to make a spread for crackers or bread and sometimes in a celery stalk. Although sometimes used simply grated as a topping on baked potatoes, the mixed spread is my favorite and I'm so glad to still find it! It has a flavor like no other! r

    We used to buy this at an Old World Deli years ago, and when they closed, we were never able to find it around us. So glad to find it online! The wrappings are different from back then, but the flavor is the same wonderful sharp, salty, taste whether grated on hot buttered toast (my favorite), or pasta, eggs, salad... okay, I admit, I use it a lot! And it lasts a long, long time, 'cause you grate it fine and don't need a lot. The new self-sealing packaging is really handy as well. Gotta love online shopping and mail delivery. Homestead had the best price I found, the best shipping rates of the places I checked. They processed the order fast, and got it here for us to enjoy a couple of days before I was even expecting it. Great experience all around, and we've got our yummy cheese back. One note, when I was online searching for the cheese, there were big differences in the shipping. I bought mine in late spring, and the fact that it does not come refrigerated was totally not an issue. According to what I read about the manufacture of this cheese, it holds up very well to periods without refrigeration, such as shipping. While I might pause to consider before ordering in the worst heat of summer, I wouldn't hesitate any other time of the year... paying lots extra for it to be shipped in a cold pack really isn't the way I'd spend my money. Of course, you'll need to take into account your location and weather, but based on my experience and research... it's safer to ship Sap Sago without refrigeration than most other cheeses... and it's so worth it to bite into that warm, buttery cheese-covered toast!!!

    My grandfather introduced me to sapsago cheese when I was a child, over 52 years ago. I am unable to locate it. I want to resume enjoying this treat again. I grate, and mix the grated cheese with butter and a few minced chives. Then spread on fresh bread or crackers.
