Creamy Buttered Noodles with Grated Sap Sago Cheese – A Simple Yet Gourmet Delight

Sometimes, the simplest dishes bring the most comfort. Buttered noodles are a timeless classic, but when you add the nutty, umami-packed Sap Sago cheese, you elevate this humble dish to a whole new level of gourmet goodness. Why Sap Sago Cheese?

Sap Sago is a Swiss hard cheese known for its intense flavor, nutty notes, and low-fat content. Traditionally, it is used in small amounts due to its bold taste. We think it grates beautifully over pasta, bringing a deep savory element that pairs perfectly with buttery noodles. Here is our home recipe that we make almost monthly! Feel free to add grilled or baked chicken, sausage, turkey sausage, steak chunks or any other protein you want - it won't disappoint. Plus, this is just beautiful and is great to make for entertaining and guests will love the uniqueness of this dish! Pair it with peas, a salad, or asparagus. We love asparagus in the air fyer! Okay, enough about that. Let's get to the Sap Sago and Buttered Noodles!

Ingredients:

  • 8 oz pasta of choice (spaghetti, fettuccine, or egg noodles work best)

  • 3 tbsp unsalted butter

  • 1/2 cup finely grated Sap Sago cheese

  • 1/4 cup pasta water (reserved)

  • 1/2 tsp black pepper

  • 1/4 tsp salt (or to taste)

  • 1 tbsp fresh parsley, chopped (optional)

  • 1/2 tsp lemon zest (optional, for brightness)

Instructions:

1. Cook the Pasta

Bring a large pot of salted water to a boil and cook the pasta until al dente, according to package instructions. Reserve 1/4 cup of pasta water, then drain the pasta.

2. Prepare the Butter Sauce

In a large skillet over low heat, melt the butter until it becomes slightly golden and fragrant. Add the reserved pasta water to help create a silky sauce. (If you like onions, feel free to thow in about a 1/2 cup of yellow or sweet onions in this step and you won't regret it!)

3. Toss in the Pasta

Add the drained pasta to the butter sauce, tossing to coat evenly. Season with black pepper and salt, then mix well. If you would like, feel free to add some fresh squeezed lemon juice to this step - touch a touch will do it!

4. Add the Sap Sago Cheese

Sprinkle in the grated Sap Sago cheese, tossing the pasta continuously to allow the cheese to melt slightly and cling to the noodles. You can also use the Sap Sago Powder if grating is too much work. 

5. Finish & Serve

For a burst of freshness, sprinkle chopped parsley and lemon zest over the top. Serve immediately and enjoy the rich, buttery, and umami-packed noodles!

Serving Suggestions:

  • Pair with a crisp white wine like Sauvignon Blanc.

  • Serve alongside grilled chicken or roasted vegetables for a complete meal.

  • Top with a soft-poached egg for extra creaminess.
