Sap Sago Cheese, also known as Swiss Schabziger®, is a hard cheese that comes packaged in a 3.17-ounce cone. 

This almost fat-free cheese is for the more adventuresome, and you'll find that a little goes a long way. It can be kept at room temperature (although we keep it under refrigeration).  It is imported from Switzerland.

History and Production of Sap Sago Cheese

Sap Sago has been made for more than 1000 years in the Canton of Glarus in Switzerland.  Its production, using fresh, skimmed Alpine cows' milk, has remained unchanged for centuries.

The milk is heated and soured naturally. Then the raw cheese is salted and flavored with the Alpine herb blue fenugreek, a special variety of clover thay makes the cheese so healthy and gives it its characteristic aroma and attractive green herb color. The natural product is matured for over 5 months, during which time it develops its typical tangy flavor.

On April 24, 1463, the citizens of Germany approved by plebiscite a law on the production, storage, and labeling of the world's first branded product. Today Sap Sago is made and sold by employing the most modern techniques, yet keeping with traditional values.

Sap Sago's uses are endless -- grate it over boiled or baked potatoes, noodles, pasta, pizza, soups and salads and even over apple and cherry pies. The Swiss often mix Sap Sago in equal parts with butter for a very tasty spread on fresh breads.

    I'm a cheese lover- this is one of the best! I grew up grating this on to toast. If you like sharp cheeses...and aren't afraid of the smelly ones...try this. Package came quicker than I thought it would.

    I have been eating Sap Sago cheese on buttered toast for many years. It's one of my favorite things! It is hard to find in stores and convenient to buy online and shipped to my door.

    This order of Sap Sego cheese was delivered promply and was just what I wanted. This cheese is difficult to find locally so it's nice to have another source.

    After depleting my previous supply I was happy to get such a quick turnaround of my favourite cheese. Within the first day I've already added it to omelettes, sprinkled on cauliflower, and into my cheddar grilled cheese sandwiches for super extra zest. A most awesome product, but maybe not for those who only like mild cheese.

    Ziger was a part of most meals at my Swiss Grandparent's dinner table. Impossible to find locally. I have searched European Deli's, Specialty Markets, and Cheese shops but was surprised that the younger merchants did not even know what it was.. I am glad that I can now get it from Homestead Market. I've used it grated on pasta, and soups, but mostly blended with sweet butter to use as a spread..

    Grow up with this cheese. Great grandmother came over with family from Switzerland in the 19th century. Great Service and Cheese.

    I use a slight amount of this slightly obscure cheese in one of my core recipes at my restaurant-Homestead gets it to me rapidly and the cheese always arrives in perfect shape!
