Description
Sap Sago Cheese, also known as Swiss Schabziger®, is a hard cheese that comes packaged in a 3.17-ounce cone.
This almost fat-free cheese is for the more adventuresome, and you'll find that a little goes a long way. It can be kept at room temperature (although we keep it under refrigeration). It is imported from Switzerland.
History and Production of Sap Sago Cheese
Sap Sago has been made for more than 1000 years in the Canton of Glarus in Switzerland. Its production, using fresh, skimmed Alpine cows' milk, has remained unchanged for centuries.
The milk is heated and soured naturally. Then the raw cheese is salted and flavored with the Alpine herb blue fenugreek, a special variety of clover thay makes the cheese so healthy and gives it its characteristic aroma and attractive green herb color. The natural product is matured for over 5 months, during which time it develops its typical tangy flavor.
On April 24, 1463, the citizens of Germany approved by plebiscite a law on the production, storage, and labeling of the world's first branded product. Today Sap Sago is made and sold by employing the most modern techniques, yet keeping with traditional values.

Sap Sago's uses are endless -- grate it over boiled or baked potatoes, noodles, pasta, pizza, soups and salads and even over apple and cherry pies. The Swiss often mix Sap Sago in equal parts with butter for a very tasty spread on fresh breads.

My father introduced me to sapsago cheese when I was a child, over 80 years ago. I am unable to locate it in either Shoprite or Stop & Shop. I want to resume enjoying this treat again. I normally grate a portion and mix the grated cheese with either butter or the commonly available "substitutes."

Worth hunting for!
After I moved and couldn't find this cheese locally, I was heart-broken. Finally found a deli about a half hour away that carried it and used to make the trip once a month just to stock up. After they started having inventory problems, I thought I'd look online. I was a little worried about how the cheese would travel, but it held up perfectly. LOVE, LOVE, LOVE this cheese on everything (but, it is an especially delicious and low-fat alternative to Parmesan for pasta dishes)!

We love the cheese topped on soups and especially with toast and butter. It is a very fragrant, strong cheese. I can't even explain how amazing it tastes!!!!!

Love this cheese!
I recently started a new low fat diet which does not allow me to have dairy products unless they are very low in saturated fat. In the receipe section in the Multiple Sclerosis Diet Book it listed Sap Sago as approved. I was a little skeptical when I ordered this slightly green cheese from Switzerland. Wow, was I pleasantly surprised. It is delicious. We have grated it on salads and pasta dishes and love it. It is very similar to parmesan cheese . I would highly recommend this Sap Sago cheese to any cheese lover who wants a little less fat intake.

Glad to find it after many years
We love this cheese on steak but haven't been able to find for many years. Ordered one for a friend who had never tried -- they loved it also. Delivery was very quick!

Yummy, Yummy treat
A German friend was nostalgic about a hard cheese her grandma used to grate and mix with butter, then serve on rye bread. It sounded great so I ordered some on line. The spread she was able to create was delicious! Delivery was very prompt and the package was still cold when I received it.
