For more than 10 years my family has loved using Xylitol. We always choose North American produced birch based xylitol which has been increasingly difficult to find from a trustworthy source at a reasonable price. I was cautiously optimistic when I ordered Simply Xylitol to try; but I needn't have worried - this is really great Xylitol! The taste is sweet and mild, the crystal size is small and dissolves easily and it bakes up well, causing no problems with rise, crumb structure or off-flavors. Great sugar substitute
We do very little baking so I haven't tried this in any cooking. However, we do drink a lot of iced tea and only use this as a sweetener. It is just as sweet as sugar with just a slightly different taste. We really like it.

Xylitol
Wonderful substitute for sugar, especially for diabetics or those staying away from sugar for their teeth's sake. I have cooked with it once so far and it resulted in a perfect substitution. You do need to graduate into using it or else be found often in the bathroom.
